Class Gift Certificates
Ready to give the gift of hands-on, transparent meat education?
We sell gift certificates for various class, which the recipient can then apply to our currently or future classes. If you want to surprise someone by signing them up for a class, go ahead and register them and surprise them! For general gift certificates, we send a beautifully designed hard copy of the certificate. Or, if you'd rather, we can send an e-copy that you print out yourself. For hard copies to arrive by December 25th purchase deadline is December 18th.
Once you have payed for the gift certificate through our website (note that you do not need a Paypal account to do so), we will email you your e-gift certificate which can be forwarded or printed.
The value of the gift certificate is for the current value of the class purchased when registering. Class prices are subject to change. However, if you buy a gift certificate, the recipient will be able to use the gift certificate for the purchased class regardless of the current pricing.
All gift certificate sales are final. Our refund policy for recipients who apply gift certificates to a class and then need to cancel is the same as for those paying with cash, except that we do not refund cash to gift certificate recipients. Rather, we "refund" the equivalent credit on their gift certificate, which can then be applied to a different class at a later date.
Our Refund Policy:
Our classes greatly depend on enough students pooling their money together to purchase the animals needed for the class. While we take care of the purchasing for you, as a student you are the one who pays for the purchase. We have to order the animals from farmers ahead of time. If everyone dropped out of the class at the last minute, you are still technically the owners of those animals and/or shares of animals. Since we are a traveling butchery school, we’ve nowhere to put the animals for safekeeping. For this reason we must have a refund policy that covers the cost of the animals no matter if a student can make it or not. If you wish to still get your share of meat, even though you can’t make the class, we can arrange for that, but if you do not let us know that this is your wish by the time class starts, we will give your meat to your fellow students. Our policy is as follows:
If students cancel 7 or more days before the class date: 100% will be refunded.
If students cancel 3 to 6 days before the class date: 50% will be refunded.
If students cancel with less than 2 day’s notice before the class date: 0% will be refunded.

Essential Sausage Making
Join Eugene Meat Collective and local meat smiths to learn the art of handmade sausage - from classic to gourmet - and why it is often so much more flavorful and delicious than its grocery-store counterpart. Come learn the tricks to making sumptuous and savory sausages. Using wholesome, pastured raised meats from local farms, this hands-on, experiential class will reveal how to select the right meat and trimmings from the appropriate muscle groups, how to get the ideal meat-fat ratio, and how to grind, flavor, and stuff your sausage of choice. After learning together, we’ll shed our aprons and gather around the farm table for a light meal featuring our freshly crafted sausages, with local and hand made wines. PLUS! You will go home with roughly 5 lbs. of links for your frying pans and freezers, and recipes. A hands-on event perfect for hunters, people with special food needs, aspiring butchers or chefs wanting to learn the craft, and of course, sausage lovers. No experience required.

Gift Certificate for the Essential Lamb Butchering Class
Essential Lamb Butchering Class
In this hands-on class students will learn how to break a lamb into its respective, delicious parts by working on three local pasture raised lambs. They will learn how to tie a leg of lamb, how it is that lamb can become bacon, why lamb makes great sausage, and how to carve a perfect lamb “popsicle.” At the end of the class, we’ll shed the aprons and gather around our farm table for a light meal! (NOTE: This is also a good class for hunters who want to learn to process their own deer.)
Take-home perks: Students will go home with a bag full of meat, bones, and fat (roughly 20 lbs. worth), plus a recipes.

Gift Certificate for the Essential Pig Butchering Class
The Eugene Meat Collective and local meat smiths will begin this hands-on class by demonstrating how to split sides of pork into primals, subprimals, retail, and charcuterie cuts. Students will then divide into two groups and do the same on additional sides of pig, with guidance from the instructor and assistant instructors. By the end of class, students will have broken the pig down into cookable cuts like ribs, tenderloins, ham roasts, chops, and coppas. When we’ve finished the last cut, we’ll shed the aprons and gather around our farm table for a light meal with local produce and regional wines!
For this class we will be using amazingly delicious local pastured pigs.
Take-home perks: Students will go home with their share of meat, fat and bones (roughly 25-30 lbs.), plus recipes.

Essential Pâté Class
In this hands on class, local meat smiths will demystify pâté, reveling the secrets to a perfect farmhouse pâté as well as the key to delicious chicken-liver mousse and pork rillette. Students will get hands-on experience making each of these three recipes, plus tips on specific equipment, good meat sourcing, and more. At the end of the class, we’ll shed the aprons and gather around our table for a light meal with farm fresh produce!
Take-home perks: Students will go home with samples of pate, chicken-liver mousse, and pork rillette.
Gift Certificate for the Essential Curing Inoculation Class
Essential Curing Inoculation
Curious about the meat-curing process and ready to jump in? Then join us for this introductory class on curing meats at home! You’ll learn about flavor profiles, starter cultures, as well as shaping and drying meats. You’ll make pancetta tesa, cured egg yolks, duck breast bresaola, bacon and landjager. Safety, sanitation, and environment will be discussed. Resources and references will provided for beginning your own dry-curing at home. You’ll start your own pancetta tesa in class, then take your piece home to finish curing. Duck breast bresaola, landjager, and cured egg yoke will be demonstrated in class, and we'll taste finished versions at the end of the class!

In this demonstration-style class, the Eugene Meat Collective and local meat smiths will introduce how to split sides of pork into primals, subprimals, retail, and charcuterie cuts. Enjoy some charcuterie and regional wine while you learn how the pig can be broken down into cookable cuts like ribs, tenderloins, ham roasts, chops, and coppas.
We will send you home with a few recipes to expand your pallet of whole-animal pork dishes!
For this class we will be using amazingly delicious local pastured pigs. Students can buy a share of the demonstration animals to take home and experiment with. This class makes a great date night!

Enjoy some charcuterie and regional wine while you learn how the lamb can be broken-down into cookable cuts and see how to tie a leg of lamb, learn what to do with lamb belly; why lamb makes great sausage, and how to French a rack of lamb (NOTE: This is also a good class for hunters who want to learn to process their own deer.)
We will send you home with a few recipes to expand your pallet of whole-animal lamb dishes!
For this class we will be using amazingly delicious local pastured lamb. Students can buy a share of the demonstration animal to take home and experiment with!
